Yummy-Rummy Tiramisu

“I want tiramisu!” was a Wednesday craving of one of the Flaviar team, but it didn't turn into reality until Friday when he decided to make one himself.

He followed the tiramisu recipe by Jamie Oliver, the naked fella from TV. Jamie's recipe already has a couple of twists on the classic Italian dessert, like chocolate and oranges. In the true spirit of Flaviar, our chef added another one himself – follow it and you’re up for something Rum…errr yummy!


Ingredients:


→ 250 g dark chocolate with 70% cocoa
→ 50 g butter, diced
→ sea salt
→ 175 g sponge fingers
→ 400 ml good hot sweetened coffee
→ 4 large free-range eggs
→ 100 g caster sugar
→ 750 g mascarpone
→ 1 orange
→ vin santo or other sweet dessert wine
This is where that Rum comes in - you simply switch wine with it. There are no cheap Rums in our spirit cabinets, not even for dessert-making, so we used no other than Zacapa XO!

Melt 200 g of chocolate in a bowl over simmering water. Add butter and a pinch of salt. Stir for a few minutes until all ingredients are combined.

Cook and sweeten the coffee and line a large dish with the sponge fingers.

Carefully pour the hot sweetened coffee over sponge fingers. Add a couple of Rum splashes to the melted chocolate and stir, then drizzle all over the sponge fingers. Put it aside until chocolate cools down.

Separate the eggs and add the sugar to the yolks with another splash of Rum. Whisk on the highest setting (you can even do it by hand like our friend did, but expect to be tired after) until all the sugar has dissolved and the yolks are pale and fluffy. Mix in the mascarpone and the orange zest.

Whisk the whites with a pinch of salt until they form stiff peaks. Using a large metal spoon, gently mix the whites into the yolk mixture.

Spoon and smooth this creamy mixture on top of your chocolate layer. Depending on the shape and size of your dish, you can do multiple layers of sponge fingers (we made two) but make sure to finish with a layer of cream.

Shave the remaining chocolate over the top.

You might think you're done now, but here comes the hard part: put the tiramisu in the fridge and wait for (at least) 2 hours!

Use that time wisely - doing 10k run is absolutely an option even if you're a slow runner.

We went for another one, however, and invited a few friends over to turn that mid-week craving into a great rooftop parteeeeey!!!
