Once an amateur Schnapps distiller, Wolfgang Thomann found his true life calling in 2014 when he distilled his first bio Juniper Schnapps. Out of his passion and 100% organic local ingredients, Aejist was born.

In just five years, a small Styrian Gin brand Aejist (pronounced aced) became an award-winning world-class Gin. The production had to be moved to a bigger distillery in St. Nikolai, but this Gin is still very much a family affair. If you are just now picturing a Grandpa sitting at the table, peeling cardamom seeds, with his son crushing junipers next to him and his daughter rubbing lemons, you aren’t far off: according to Wolfgang, macerating together is the Thomann family’s way of spending some quality time together.

Speaking of quality: Aejist is made from 100% organic ingredients. This Pale Gin is composed of nine beautifully balanced botanicals that are macerated directly into pure wheat Alcohol. Once it absorbs all of that delicious flavor, this Brew is then distilled in copper kettles to an envious ABV of 78%. Then, it is diluted with fresh spring water, filtered, and just when you’d think you can finally get your lips on it, it is put aside to rest for the next four weeks. This crucial phase gives the liquid the smoothest finish you imagine. Pale only in color and not in taste, this extraordinary Gin offers a rich flavor profile that should be enjoyed straight, no extras needed.
