A perfectly-aged Rum that brings great spirits back to the Sugar State.
It happened much as you might expect. Brothers Tim and Trey Litel were duck hunting with their friend Skip Cortese in a duck blind between the Bayou and a sugarcane field in southern Louisiana. Naturally, the topic of drinking came up. Next thing you know, they three are forming Louisiana Spirits to bring Rum production back to the Creole State. Founded in 2011, they have an 18,000 square foot distillery producing a line of award-winning Rums under the Bayou label and haven’t looked back.
Bayou Select is their barrel-aged Rum. But it is not “just” barrel-aged for a minimum of three years in ex-Bourbon casks. It is aged using the Solera method. And as you may remember, the Solera method means that the "average age" of the Rum is far older and gets better with each passing year because the barrels are never completely emptied — a portion of the older Rum is left to mingle with the new. Of course — just like with all of their Rums — they use local Louisiana, unrefined sugarcane and leave the molasses in. The resulting spirit is double distilled in copper pot stills right on site.
