A Tasmanian Whisky Kissed by the Spanish Sun

El Sol is what happens when Tassie ingenuity meets Spanish tradition. Matured in ex-Sherry (Oloroso, Pedro Ximenez, Amontillado, Palo Cortado, Fino, and Moscatel) casks from Jerez, this single malt is a rich, complex dram that’s basically sunshine in a bottle. Bottled at 92 proof, it delivers luscious notes of dried fruits, coffee, and dark chocolate with a smoky, lingering finish that’s more captivating than a summer sunset in Andalusia.

Your next stop is Oatlands, Tasmania, where a 19th-century flour mill has transformed into one of Australia’s most ambitious modern distilleries: Callington Mill. Combining pure Tasmanian water, locally grown barley, and state-of-the-art technology, the distillery produces whiskies rich in character and terroir.
Your sample, El Sol, is an ode to the sun-soaked wine traditions of southern Spain. Matured in six ex-Sherry cask types—Oloroso, Pedro Ximénez, Amontillado, Palo Cortado, Fino, and Moscatel—it draws deep flavors from casks sourced directly from Spanish bodegas and filled “wet” for maximum impact.
Expect notes of dried fruits, crème brûlée, cacao, roasted coffee, and long, elegant warmth.
Southern Spain meets Tasmanian craftsmanship—sunlight in a glass.
As Captain McFly says:
“Every grain of barley in your dram was grown and malted right here in Tasmania. Pure island pride in every sip.”
