Catoctin Creek® was founded by Becky and Scott Harris in 2009, and is the first legal distillery in Loudoun County, Virginia, since before Prohibition. Pronounced Ka-TOCK-tin, the name comes from the Indian tribal name "Kittocton" which supposedly means "place of many deer" and describes a mountain range and the creek which flows past the distillery. The grain used in Catoctin Creek's spirits is not only locally sourced, but also organic, free of pesticides and chemical additives, making the award-winning Roundstone Rye one of the few organic Whiskies in the world.
This 100% Rye gives off hints of caramel, toffee, lemon, all rounded with a woody, mellow taste that comes from a slow (five to seven days) fermentation process. After distillation the Whisky is aged in new Minnesota white oak casks sealed by beeswax for just under two years, and bottled at 80 proof.
All this takes place on site at the distillery with absolute dedication and attention to detail that give the Roundstone Rye a character which brings to mind pre-Prohibition Whisky, whether you drink it on the rocks, in a Manhattan, or sip it on its own. Or as the Catoctin Creek motto goes, Sic semper secales!: Thus always to Rye!
Smartass corner: True American Rye Whiskey must be distilled from no less than 51% rye. Once immensely popular, it almost disappeared after Prohibition, only to see a revival in the last decade.
