Hukashu distillery is the second distillery of Suntory. It was established in 1973 by the great Shinjiro Torii and is located 700 meters high, surrounded by expansive forests and Mt. Kaikomagatake. It is one of the highest located distillers in the World (by comparison the highest Scottish distilleries are on 355 meters) which contributes to the malt’s mild refreshing taste and crisp citrus aromas. Because of the high elevation the Whisky ages more slowly and with a lesser influence of wood on the spirits. Unlike at Yamazaki (the first distillery of Suntory) they mainly focus on ex-bourbon and hogshead barrels. They only use wooden wash backs, which helps take advantage of the site’s natural bounty.
The Hakushu Bourbon Barrel Whisky is a gently peated Whisky aged entirely in first-fill bourbon barrels, which results in a creamy dram, reminiscent of Bourbon.
