One of the most sophisticated examples of fine French Pastis with a rich, complex palate.

Distilleries et Domaines de Provence has been making some of the world’s finest Liqueurs and Aperitifs since 1898 in Forcalquier — a mountaintop commune in the heart of Provence, France. This particular region is famous for producing a huge variety of superior herbs, flowers, and aromatic produce, being called a "paradise for botanists." The distillery was founded by Henri Bardouin. Since 1974 the operation has been run by Alain Robert and a small team of dedicated craft professionals making a tidy rage of specialty Spirits from local ingredients.

Pastis Liqueurs became popular in the wake of the Absinth debacle. Henri Bardouin created his secret formula for Pastis and it was greeted warmly by a very thirsty community in southern France. Famously, Henri Bardouin Pastis is infused with more than sixty-five botanicals — two dozen of which are still held as a closely guarded secret. True to the style, star anise forms the core flavor profile. Other "know" infusions include mugwort, grains of paradise, cardamom, pepper, tonka bean, nutmeg, clove, angelica, cinnamon, lemon balm, sage, rosemary, licorice, thyme, lemon verbena, coriander, St. John’s wort, chamomile, and many more. It’s delivered at 45% ABV and the distillery recommends diluting 5-to-1 with water and allowing it to rest prior to savoring.

The word "Pastis" comes from the local Occitan language of the area and it means "mash-up." Which seems very appropriate to us.

Nose / Aroma / Smell
The aroma is rich and exceedingly complex with notes of warm anise, baking spices, wild florals, and honey.

Flavor / Taste / Palate
Taken as recommended with water, the flavor profile builds upon the nose with loads of rich herbs and a layered, lightly sweet notes of summer fields and cinnamon, wood resin, orange blossom honey, licorice, and more.

Finish
The finish is soothing and lightly sweet.
