Himbrimi Old Tom Gin

A hand-infused compound Gin from Iceland with a woodsy, herbal profile.

In 2014, local Icelandic artist Óskar Ericsson decided to create a Gin that reflected the natural botanicals and environment of his home country… something that we could take with him on his fishing trips and into the Icelandic wilderness. To this day he still collects all the local botanicals himself — by hand — during the summer months along the riverbanks where he walks. He infuses his compound Gin and then hand-numbers each bottle of his limited production.

Himbrimi Old Tom Gin is an interesting concoction that Óskar made to be a fishing companion sipper. The base is their signature Himbrimi Gin infused with juniper, wild Arctic thyme, angelica seeds, and lemon zest before being lightly sweetened with honey. Since the infusions are infused rather than distilled, you may see small bits of sediment in the bottle — this is perfectly normal and evidence of the hand-crafted nature of the Spirit. The final Spirit is brought to proof at 40% ABV and has the rich color of Whiskey.

Smartass Corner:
"Himbrimi" is the Icelandic word for the common loon, and translates literally as "heaven howler." In England it is called a "diver" because it dives into the water to eat small fish and crustaceans.
