Pearse Lyons was a successful businessman and CEO living in Kentucky — surrounded by the great American distillery culture. He even established Lexington Distilling and Brewing Company there. But Pearse was born in Dundalk County of Louth, Ireland, and he remembered his roots. So when he retired from business, he returned to the land of his birth. He and his wife Deidre found an old abandoned church in the heart of Dublin’s distillery district — Saint James. They completely restored the church to it’s former glory and installed the finest copper still to make a true Irish Whiskey.
Pearse 5 Year Old Single Malt Irish Whiskey was the first Spirit to come from their own stills. It is a true Irish Single Malt made on their small-batch Vendome copper pot stills that he sent from his Lexington facility. It is a pure expression of the craft, matured for five years in refill ex-Bourbon casks and placed in an elegant tapered decanter at a spot-on perfect 46% ABV. It’s a limited edition bottle of history.

Pearse Lyons passed away in 2018. In addition to his business accomplishments, he had multiple advanced degrees in biochemistry, brewing and distillation. He authored more than twenty books and dozens of published scientific papers. He has been called an "entrepreneur, salesman, marketer, and scientist all rolled into one."
