Dublin, the capital of Ireland, used to be the capital of Whiskey as well. Back in the 19th century, Irish Whiskey was a global blockbuster, until a series of unfortunate events (war, draught, and unwillingness to modernize) brought us the dawn of Scotch. But Irish Whiskey is back and stronger than ever. Part of the new wave are also Pearse and Deidre Lyons, who set up shop in the Liberties neighborhood of Dublin, right next to the ancient St. James church. The 12th century house of God (where Pearse’s grandfather was also buried) was refurbished and resurrected, serving faithfully now as a house of Spirits.
As the name implies, Founder’s Choice was Pearse’s personal endeavor to create a top-notch Whiskey his establishment would be proud of. He handpicked the right oak casks with Spirits matured for 12 years and he says this blend is the distillery’s finest. He ain’t lying. The no-fake-color and no-chill-filtration Irish Whiskey is bottled at 48% ABV and brings distinctively fine flavors to one’s palate.
