Roughstock Distillery in Bozeman, Montana, had their first copper still delivered in 2008. The first spirit dripped off the cooling coils a few months later. This made Roughstock the first distillery in Montana in more than one hundred years. They keep everything local — they say, “Grain to Glass” — and everything is done in-house. Over the years they have grown to five signature Whiskies that cover the gambit — from Pure Malt to Black Label Bourbon.
“Spring wheat” refers to softer, low-gluten wheats that are often used to make cake flour. They are smoother and ferment well, delivering a less grain-like punch to the palate and showcasing the aging and wood more. Roughstock Montana Spring Wheat Whiskey is made from this gentle grain before being aged in ex-Bourbon casks and then finished in well-toasted virgin French oak.
