Sibling Distillery is a new small-batch producer in Cheltenham, England — almost to the border with Wales. As the name suggests, the four founders are siblings under the age of 25. Imagine Mum and Dad as the four precocious youths came up one day and said, “We are going to start making Gin.” That would have been an interesting conversation. But more interesting is that they are going about it the right way triple distilling their own spirit from scratch in a custom Carterhead still from the best ingredients available.
The fact that they use a Carterhead still is no accident. It’s the type custom designed to make great Gin and it’s utilized by all the premium producers. Instead of steeping the botanicals in liquid alcohol, it places a special perforated basket between the tower and cooling coils that allows the alcohol to pass through the botanicals as a warm vapor better and improves the extraction of the essences while retaining viscosity and character. The exact recipe for Sibling Triple Distilled Dry Gin is a trade secret, but we detect juniper, vanilla, orange and lemon zest, cardamom, and blueberries.
