St. Germain Elderflower Liqueur was launched by the late Robert Cooper of Cooper Spirits in 2007 — and it changed the world of cocktail-making overnight. Not only did he revive an entire segment of the specialty liquor segment, but he capitalized on the newly burgeoning craft-cocktail market hungry nor a fresh ingredient for mixologists to build upon. Robert Cooper sold the company to Bacardi in 2013 and went on to invent a handful of additional spirits products.
Elderflowers are fleeting. They only bloom for a few weeks each year and they cannot be machine-collected or pressed like grapes because all such automation destroys the delicate flavors. So the flowers are had picked and deliver by bicycle to the mill where they are gently and swiftly macerated and steeped — yielding a rich, unique, floral, and fruity spirit critical to a host of modern cocktails. The entire production run of St. Germain Elderflower Liqueur for the year is completed in mere days.
