Melbourne is famous for its insane weather, where all four seasons present themselves in one day like it’s a demo. But while such changes may be obnoxious to people, they’re perfect for maturing booze. David Vitale, Melbourne native, established the Starward Distillery in 2007. He sources his barley from the nearby farms, while the maturation barrels come from vineyards in Victoria. Starward’s Whisky spends two years only in Red Wine barrels, but the crazy climate accelerates the process in "Melbourne years." Their Spirits are unique and unmistakably Aussie.

Released for the 6th time already (People seem to really dig it!) as part of their experimental Projects Program, Starward Ginger Beer Cask Australian Single Malt Whisky starts with their Single Malt Whisky that’s finished in casks that used to hold their brewed ginger Beer. You can still taste the influence of both the Apera (fortified Wine) and Red Wine barrel maturation from the Single Malt, only this time, the juice is packed with ginger and citrus peel. The nose brings dark chocolate and orange aromas, while the palate complements the Whisky flavors with ginger intensity. Sip it neat and don’t hesitate to nibble on some dark chocolate or splash it over your ice cream. Up to you.
