Stauning sits on the West Coast of Denmark facing the North Sea. It’s a quiet farm community of rolling hills dotted with seated moors. But if you sailed a boat directly west from there, you would sail right into the Firth of Forth with Edinburgh on your left. When it comes to climate, Staining actually has more in common with the Highlands of Scotland that Copenhagen.

And it was here when in 2005 nine friends set up shop to learn the craft of making Whisky. They wanted to push the boundaries of Whisky by reviving traditional methods with 24 copper pot stills in an old abandoned butchery, surrounded by rolling hills of grain. They even malt their own local grain. Welcome to the world of complex and deep flavors of Staining Danish Whisky.

The word “Kaos” in Danish means exactly what you think it does — “chaos”. Thorvald Stauning once said “Stauning or Chaos” and went on to win re-election as Prime Minister in 1935. But Stauning Kaos Danish Whisky is the opposite of chaos. It’s a carefully thought-out blend of their three core Whiskies — Single Malt, peated Single Malt, and malted Rye. This curious marriage brings you a bit of smoke, a bit of spice, some sweetness, and plenty of complexity at a perfect 46% ABV.

Appearance / Color
Golden amber

Nose / Aroma / Smell
The aroma is complex with warming spices and sweet fruity aromas.

Flavor / Taste / Palate
The mouth-feel is well-rounded and full with a flavor profile of pear, sweet apple, and quince jam that give way to hazelnut and dust, smoky spices. Zesty and peppery flavors finish it off.

Finish
The finish is medium length, lightly spiced, and warm.

Long finish coca and citrus. Surprisingly good. I did not expect to like this based on the description but it's complex and interesting and I think I have to buy a bottle.

Solid stuff. Not sure I'd pay $84 for an entire bottle though. Don't get me wrong, it's good. Smoky, smooth, doesn't hang on terribly long but its got a nice warmth to it.

I was so excited to try this as the flavor notes seemed to be right up my ally with the claim of sweetness. This was by far the worst whisky I have ever tried. The over power of smoke taste feels like drinking water out of an ash tray. The alcohol burn is also extreme for a 92 proof. I let multiple people try this and they are cringed when sipping. Do not recommend.
