Hello, or should we say Dia duit, fellow explorer of craft Irish Whiskey!

We’re always rooting for amazing ideas to beat the odds. At a time when three friends founded an artisan craft distillery in the Milltown district of Dingle in southwest Ireland, three major brands ruled over the Irish distilling world.

So you can see the competition was tough but by choosing quality over quantity, these Dingle guys went from a small distillery, based in an old sawmill, to the leading force of the Irish Whiskey renaissance.

How did the Dingle story begin, though? Well, essentially it all started with Beer. In 2012, Oliver Hughes, Liam LaHart, and Peter Mosley — three friends and people behind the Porterhouse Brewing Company and the Irish Craft Beer revolution had a crazy idea to found a craft Whiskey distillery in Ireland. It might not seem that insane of an idea today but it certainly was back then, a small artisan distillery taking on the big Irish Whiskey brands.

The Dingle guys were entirely committed to making quality Spirits, however, and slowly began to drive the new wave of Irish craft Whiskey renaissance. As with many new producers, they first began making Gin and Vodka while waiting for their Whiskey to mature. The first drops of Dingle Whiskey were made available in 2015 and their production intentionally remains small to preserve the quality of their Spirits.

Dingle Single Malt 2021 Release (46.3% ABV) is a triple-distilled Whiskey that was aged in a combination of Pedro Ximenez Sherry casks and 1st fill Bourbon casks, making it the most sherried jingle of all the Dingles. Dingle Single Malt Batch No. 5 (46.5% ABV) is a complex beauty that was aged in a combination of three casks and crafted with local well water. Dingle Original Gin (42.5% ABV) is crafted as a classic London Dry Gin but infused with local botanicals to give it a true taste of the County Kerry landscape.

1) The Dingle Distillery has three custom-made pot stills with a special boil ball.

2) Did you know that the word ‘Whiskey’ actually comes from the Gaelic word ‘uisce beatha’ that means ‘water of life’? This just goes to show how old the Whiskey tradition is on the emerald island. The first records of Irish Whiskey are even older than the records of Scotch.

3) Irish Whiskey was one of the first distilled Spirits in Europe in the 12th century. The story goes that it was Irish monks who brought methods for distilling perfumes back to Ireland from Southern Europe around 1000 AD. The Irish then took this technique and crafted something even more fun: Whiskey.

4) The term Irish Whiskey refers to the Whiskey that was made on the island of Ireland. There are four types of Irish Whiskey out there: grain, malt, pot still, and blended.

5) In the 20th century, Irish Whiskey was in decline mainly due to the Irish war of independence and the American Prohibition movement but today, Irish Whiskey is the fastest growing Spirit in the world.

6) The Old Bushmills Distillery was the first licensed distillery in the world.

7) Founded in 2015, the Teeling factory is the first distillery to open up in Dublin in the last 125 years.
