Not far away from Elliott Bay, a bold new distillery was established in 2010 by two childhood friends: Master Distiller Matt Hoffman and CEO Emerson Lamb. They called it Westland Distillery and their Spirits embody the nature of the Pacific Northwest. Matt, as many other Whiskey-makers, went to Scotland and absolutely fell in love with the Single Malt. The distillery's two copper pot stills create the core American Single Malt Whiskey, which is made using malted barley, at a single distillery, just like in Scotland - except American laws are laxer and allow more experimentation.
Westland American Oak Single Malt Whiskey is made from five marvellous roasted and kilned barley malts - barley is of course grown in the state of Washington. Then, there's a not-so-secret secret: specialty malts are added before the final mash is fermented with a Belgian brewer's yeast for six day. The Spirit is matured in a combo of Cooper's Select New American Oak, Cooper's Reserve New American Oak, and first fill ex-bourbon barrels. American Oak Single Malt won multiple awards, including a Gold Medal at Beverage Tasting Institute, while Jim Murray have it 95 points.
