Walsh Whiskey set out to rediscover real Irish-style Whiskey as it was made 200 years ago. When Welsh Whiskey first started in 1999, they contracted their distilling to Bushmills. But their success has allowed them to build out their own distillery in Carlow — in the heart of Ireland’s southern farm country — where they make eight versions of The Irishman Whiskies, six Writer’s Tears blends, and two varieties of Irish Cream Liqueur.
For Writers' Tears Double Oak, the Walsh Whiskey Distillery took two Irish Whiskies — one Single Malt and the other Single Pot-Still. Both are 100% barley, triple distilled, and non-chill-filtered. They aged one in American ex-Bourbon casks and the other aged in French ex-Cognac casks using Limousin oak and blended them together. The French casks came from the Legaret Family estate — makers of DEAU Cognac — and bring tannins and fruit notes. The American casks deliver vanilla and oakier flavors. The resulting elixir is bottled at a perfect 46% ABV.
*Writers' Tears has recently changed their labels, and as the original labels are being phased out, there is still a chance that you might receive a bottle different than what is pictured. But rest assured, the liquid remains the same, regardless of the label.

The aromas linker on grains, vanilla, warm pears, and a dash of cinnamon.
Flavor / Taste / Palate
The flavors build on the aromas and add grape must, orange zest, and a bit of butterscotch.
Finish
The finish is medium-length with notes of cocoa and baking spices.
