You know how you get all these great ideas when you're having a drink with your buddies? The kinds that involve quitting your boring old day job and reaching for something greater? Most of those grand schemes never see the light of day. The one that came to a group of friends in the heart of Houston, Texas, became Yellow Rose Distilling. The first legal Whiskey distillery in Houston became operational in 2010, named after a folk heroine and nestled smack dab in the middle of the city. Since the launch of their first product in 2012, their juice has brought home several awards, with Yellow Rose opening a tasting room and expanding considerably over the years.
It all begins with unique Texas soil and climate. Seeking out the best local corn, rye, and barley, they whip up a sweet mash, fermenting it into distiller's Beer that they double-distill using a copper-pot still. Once the juice goes into their charred oak barrels, they let the unique Houston heat and humidity work their magic for 4 years. Their small-batch Rye Whiskey uses a mash bill of 95% rye and harkens back to pre-Prohibition times. With its deliciously classic profile, it's equally at home on its lonesome or in a cocktail.
