Founded in 2017 on Refshaleøen island in Copenhagen by Lars Williams and Mark Emil Hermansen, both former employees at Noma, a two-Michelin-star restaurant who were inspired by the incredibly powerful role flavor plays in our lives and expreiences, Empirical Spirits calls itself a flavor company.
Building custom-built machinery, developing hybrid fermentation techniques and augmenting low-temperature distillation, Empirical Spirits sources only the highest-quality ingredients all over the world and they're committed to completing their vision of innovating and pushing boundaries in the Spirits industry.
Exploring brewing and distilling techniques, Empirical Spirits actually creates their own unique base Spirit they describe as "a mash-up of eastern and western techniques, taking the best parts of Sake and fusing them to the best parts of Beer". Williams prefers koji to malt because of its sweet and nutty flavor profile, which you can taste it in their Spirits.
Boasting an exciting and fascinating product portfolio with a wide range of Spirits with memorable names, Empirical Spirits offers ‘Ayuuk’, which brings together smoky Pasilla Mixe chilli from Mexico, Danish purple wheat and Pilsner malt; ‘Helena’, which is a double fermented clear koji Spirit; ‘The plum, I suppose’, blending kernel inside plum stones and kombucha, and lastly, ‘Fuck Trump and His Stupid Fucking Wall’, a koji-based habanero Spirit distilled at a low temperature.
