All about Hayman's
The Hayman Distillery produces a number of Gins, with the Old Tom and London Dry being the most well-known. Interestingly, all the Gins produced by Hayman’s use the same botanicals, with different amounts to create various flavor levels.
For example, production of the Old Tom Gin uses twice as much juniper as the London Dry. Hayman’s Old Tom Gin launched in 2007, and these days is the market leader for this sub-category of Gin.
Recreated from a family recipe dating back to the 1860s, it brought a resurgence to this older style of Spirit, and its flavor has that classic sweetness you’d expect from an Old Tom. The London Dry Gin, on the other hand, is more of a classic Gin style.
Made with botanicals steeped in grain spirit for 24 hours before distillation, the flavor is created by mixing juniper, coriander, cassia bark, citrus peels, orris root, cinnamon, and nutmeg; everything you’d expect from a traditional style of Gin.

All about Hayman's distillery
The Hayman family is the UK’s oldest distilling family, dating back to 1863, when James Burrough bought a Gin company in London.Today, the Hayman Distillery is headed up by Charles Hayman, great-grandson of James Burrough. Charles joined James Burrough Limited in 1969, and was responsible for the production of Beefeater Gin until the late 1980s.
In 1987, the company was sold to Whitbread. Charles moved, along with the ownership and worked a while for the company before realizing working for a large conglomerate wasn’t for him.
In 1988, Whitbread sold James Burrough Limited back to Charles and the Hayman family, and it’s been known as Hayman Limited ever since. Today, the distillery sits in Witham, about 40 miles East of London. The distilling, blending and bottling of Hayman's Gins all takes place on this one site.
